Weekend Cooking: How to Roast Oysters on the Grill

Fall is here, which means it’s time for football and oysters! My husband loves to cook shellfish (see my post about his Steamed Littleneck Clams) and his Saturday afternoon/evening routine is to roast oysters on the grill and watch some college football.

His method couldn’t be easier. He usually uses a $40 fire pit with a make-shift grate over the top. In the picture below, he’s using our Weber charcoal grill (do NOT use your gas grill for oysters…the juice dripping down will ruin the grill). Wait for the flame to die down – you just want burning embers. Put the oysters (in their shells) on the grate and let them cook until they open a crack.

Use a shucker to open the shell and remove the oyster. The edges of the oyster should curl, but not too much!

Roasted Oysters on saltine crackers with cocktail sauce

Serve the roasted oyster on top of a Saltine cracker with a dollop of cocktail sauce.

My contribution to the afternoon is the cocktail sauce (yeah, I know…not a very even distribution of labor!). I’m not big on measuring, so this is more of a “suggested combination” than an actual recipe.

Cocktail Sauce
Ketchup

Gold’s Prepared Horseradish
Splash of Worcestshire Sauce
Lemon Juice

    I haven’t had oysters in years — it’s hard to get fresh ones around here. I didn’t know about not grilling oysters on a gas grill; thanks for the warning.

    We use a charcoal grill all the time, love that taste. We have not tried she’ll fish on the grill but I think I would like it. Love oysters.

    We don’t have a charcoal grill but we do have a smoker–guessing it wouldn’t be the same effect, though. I’ve never cooked shellfish but I do like oysters and I love horseradish. Ha!

      Try one of those cheap fire pits that you can get at the hardware store. We use that often too. And 2 bricks with a grate across them on top!

    I’ve never had oysters, but may give them a try since it sounds so easy to do on a grill. That sauce sounds yummy too, I love all the ingredients.

    It’s summer time right now, so will have to wait on the oysters, but have never heard of the juices messing up a gas grill. (What does it do to the grill?)
    I’ll be sure not to use our gas grill for these though, but I’m sure this will be a fall recipe we try.
