Yes, today we have more fish! And, this week it’s Mahi Mahi. I bought the fish without a recipe in mind and came home to look for something simple with ingredients that I might have lying around the house. I found this Seared Mahi Mahi with Zesty Basil Butter recipe on Foodnetwork.com.
At first, I thought this was a Paula Deen recipe and I thought it might be the healthiest recipe I’d ever seen from her – it still contains butter, but only 3 tablespoons, which is minuscule for Ms. Deen! Then, I looked a little closer and realized the recipe is actually courtesy of The Deen Brothers (meaning her sons, who have a healthier cooking style) and was just featured on one of Paula’s shows. I knew Paula couldn’t stick to 3 tablespoons of butter!!
Paula Deen’s Seared Mahi Mahi with Zesty Basil Butter

Ingredients
3 tablespoons unsalted butter
1 1/2 teaspoons freshly squeezed lemon juice
1 large garlic clove, finely chopped
1/4 teaspoon salt, plus additional for seasoning
1/4 teaspoon freshly ground black pepper, plus additional for seasoning
1 1/2 tablespoons chopped fresh basil leaves
3 tablespoons olive oil
4 (6 to 8-ounce) mahi mahi fillets
Directions
Zesty Basil Butter:
Combine the butter, lemon juice, garlic, salt, pepper, and basil in a medium saucepan and cook over low heat, stirring until the butter melts. Cover and keep warm over low heat.
Heat the oil in a large skillet over medium heat. Season the fish with salt and pepper, to taste. Cook the fish for 3 minutes; then turn and cook until just opaque, about 3 to 4 minutes more. Transfer the fillets to individual plates.
Spoon the warm basil butter over the fish and serve.
Note: I served the fish with zucchini sautéed in olive oil with basil and red pepper flakes. The basil in both spots tied the dishes together nicely.

Basil butter sounds AMAZING. I shall have to try this one… maybe with the tilapia filets I have in the freezer?
I think this would work great with tilapia…and mild white fish!
Mmmm. Yummy! Whenever I have fresh basil, I put it in everything too!
Fun fact: Mahi mahi used to be called “dolphinfish,” but some people thought it was the same as “dolphin” (the mammal) so they weren’t buying it at the market or ordering it in restaurants! Finally someone had the brilliant idea to market it under its Hawaiian name, “mahi mahi.” Same fish, different name, problem solved. 🙂
